Poblano Corn

INGREDIENTS:

  • 2 tablespoons extra virgin olive oil

  • 1 diced poblano pepper

  • 1 diced yellow onion

  • 1 cup frozen corn

  • Juice of 1/2 lime

  • 1/4 teaspoon cumin

  • 1/2 teaspoon salt

  • 1 cup canned black beans



DIRECTIONS:

  • Heat medium cast iron pan over medium heat and add olive oil.

  • Sauté poblano and onion until soft (5-10 minutes).

  • Increase heat slightly and add frozen corn, lime juice, cumin and salt. Cook the corn until slightly seared.

  • Add black beans and cook until warm.

  • Serve and ENJOY!
