Poblano Corn

Cook Time: 15 minutes
INGREDIENTS:
2 tablespoons extra virgin olive oil
1 diced poblano pepper
1 diced yellow onion
1 cup frozen corn
Juice of 1/2 lime
1/4 teaspoon cumin
1/2 teaspoon salt
1 cup canned black beans
DIRECTIONS:
Heat medium cast iron pan over medium heat and add olive oil.
Sauté poblano and onion until soft (5-10 minutes).
Increase heat slightly and add frozen corn, lime juice, cumin and salt. Cook the corn until slightly seared.
Add black beans and cook until warm.
Serve and ENJOY!
