Homemade Corn Tortillas + Baked Corn Chips

Servings: 8
Prep Time: 5 minutes + 30 minutes or more to sit
Cook Time: 20 minutes

INGREDIENTS:
1 cup Masa Harina Corn Flour
1/2 cup + 2 tablespoons hot water
1/4 teaspoon salt
DIRECTIONS:
Dissolve salt in hot water in a medium sized mixing bowl.
Add in Masa Harina Corn Flour and mix until completely combined with the water.
Roll into a ball (the dough should stick together without crumbling).
Set aside for 20-60 minutes.
Turn a cast iron pan on medium high heat (NO OIL).
Cut your dough into halves until you have 8 even pieces. Roll each into a ball (dab with warm water if they are crumbly).
With a rolling pin, roll out each ball between 2 pieces of parchment paper. You want them as thin as you can go without them crumbling.
Use a wide spatula to transfer the tortilla into the hot cast iron pan. Cook for 60s or so on each side.

FOR THE CORN CHIPS:
INGREDIENTS:

8 corn tortillas, cut into desired shapes
2 tablespoons extra virgin olive oil
salt to taste
DIRECTIONS:
Preheat oven to 400.
Brush cut tortillas with olive oil and sprinkle with salt.
Evenly lay chips out on a parchment paper lined cookie sheet.
Bake for 10-11 minutes until crispy and starting to brown slightly. DO NOT pull them out early. It's better for them to over-cook a bit so that they are very crispy.
Let cool, then ENJOY with some guacamole!!
