Easy Instant Pot Artichokes

Cook Time: approximately 1 hour total

INGREDIENTS:
2 artichokes
1 cup water
DIRECTIONS:
Place artichokes on their sides in the Instant Pot on the trivet along with the 1 cup water. Put the lid on and pressure cook for 20 minutes.
When the cooking cycle is complete, quick-release the pressure and remove artichokes.
Let the artichokes cool for 5 mins and then carefully cut in half from top to bottom. Use a serrated knife for best results.
Next, using a spoon (I like a grapefruit spoon), remove the choke part of the artichoke- the white fuzzy middle. I also remove some of the purple petals because they can be sharp.
To eat, pull off one petal at a time, dip and eat by scraping off the meat from the petal.
