Fennel Orange Salad

INGREDIENTS:

  • 1 fennel bulb

  • 2 oranges

  • Juice of one orange

  • 1/4 cup Champagne vinegar

  • 1/4 cup Olive oil

  • Salt to taste


DIRECTIONS:

  1. Cut the top and bottom off of fennel bulb. Cut in half and thinly slice. Save the greens for garnish if desired. Add to a medium mixing bowl.

  2. Cut the peel off the orange, including pith and segment into pieces. Cut each slice in half. Add to the fennel.

  3. In a small bowl, whisk together orange juice, champagne vinegar, olive oil and salt.

  4. Add dressing to fennel and oranges, garnish with greens and ENJOY!
