How To Roast Veggies

Cook Time: 20-25 mins
Roasting veggies is easy! They are also ideal for your food prepping routine during the week. Add them to eggs, salads, sides, pizza, quesadillas, add them to a bowl, sub out pasta, really anything! Here's how you do it:
INGREDIENTS:
1-2lbs veggies (onions, garlic, zucchini, Brussels sprouts, asparagus, broccoli, cauliflower, potatoes, tomatoes, etc)
2-3 tablespoons Extra Virgin Olive Oil
salt & pepper to taste
any other seasonings or marinades (I used a balsamic reduction on my asparagus after I cooked it)
DIRECTIONS:
Preheat oven to 450.
Use a large baking sheet with parchment paper.
Cut veggies into desired sizes.
Place veggies on parchment paper and coat with olive oil, salt and pepper. Spread veggies out with minimal overlaying (it will effect cooking time and texture).
Bake for 10-12 mins, stir and then another 10-12 minutes until desired color (I like mine a little carmelized).
