Spicy Maple Breakfast Skillet

Servings: 4


-2T olive oil

-1/2 sweet yellow onion chopped

-1 sweet potato diced

-1/2 bell pepper diced

-3 mushrooms diced

-1 small zucchini diced

-1/2lb turkey sausage

-1 T maple syrup

-1/2-1t crushed red pepper

-salt and pepper to taste


Heat pan with olive oil over medium heat. Sauté onions for 2 mins, add sweet potatoes to pan. Sprinkle with salt and cover the pan. Add 1/4c water to speed up potatoes.


Add the rest of the veggies and the turkey sausage. Break the sausage up, cover and cook for 5 minutes.


Uncover and turn up heat to medium high to carmelize veggies for about 3 minutes. Stir occasionally so nothing burns, but let it get some sear. Stir in maple syrup (the pan should be hot enough that it bubbles) and crushed red pepper. Finish with salt and pepper.


Serve with eggs. This would be an awesome food prep meal as well- serve with hard boiled eggs.
