Baked Sablefish with Warm Mango Salsa

Servings: 2-3

Prep Time: 25 minutes
Cook Time: 15 minutes
INGREDIENTS:
1 lb wild-caught sablefish (or could substitute for another white fish)
2 ripe yellow mangos, pitted, skinned and cubed
4 tablespoons organic extra virgin olive oil, divided
1 tablespoon raw unfiltered honey
salt/pepper to taste
1 large avocado, cubed
1 lime, zested and juiced
1/4 cup cilantro chopped
2 green onions, sliced
1 1/2 teaspoons chili powder
3 tablespoons melted butter
1 lemon juiced
steamed organic white rice
DIRECTIONS:
Steam rice.
Heat the oven to 500 degrees F.
Heat cast iron pan to medium- high heat. Add 2 T olive oil, mango, honey and season with salt. Sear for 5 minutes until mango is caramelized. Transfer to a medium mixing bowl and let cool for 5 minutes.
Make warm mango salsa by adding avocado, cilantro, green onions, olive oil, lime juice, chili powder. Adjust seasonings to taste. Set aside.
Melt butter and add lemon juice, grease the bottom of an 8x8 baking pan, add sablefish skin side down and cover with the remaining lemon butter.
Bake for 7 minutes or until internal temperature is 130 degrees F (more time for desired doneness).
Serve on a bed of steamed rice, topped with mango salsa. ENJOY!
