Lamb Meatballs

Servings: 20-22 meatballs

Prep time: 10 minutes

Cook time:15-20 minutes


INGREDIENTS:

  • 1.5lbs ground lamb

  • 1/4c yellow onion, chopped

  • 1/3c almond flour

  • 1 egg

  • 2.5t allspice

  • 1.5t coriander

  • 1.5t cumin

  • 1.5t dried mint or 2T fresh mint

  • 1.5t salt

  • 3/4t black pepper


DIRECTIONS:

  1. Preheat large baking sheet at 450 degrees F.

  2. In a large mixing bowl, combine all ingredients and mix well with hands.

  3. Roll meatballs into 1.5-2oz balls.

  4. Take preheated baking sheet out of oven and cover with parchment paper. Evenly space meatballs (listen to them sizzle!).

  5. Turn oven down to 400 degreese and bake for 15-20 minutes until golden.

  6. Serve with Cucumber Greek Yogurt Dipping Sauce and Edamame Hummus.

  7. ENJOY!!
