Spaghetti (Sauce) and Balsamic Glazed Spicy Meatballs (dairy-free option)

INGREDIENTS:
2lbs ground beef
1/4 grated Parmesan or almond flour for dairy-free
2 eggs
2T Italian seasoning
1/2t salt
1/2T pepper
1-2t crushed red pepper
2T minced garlic or 1/2T garlic powder
2 tablespoons Extra Virgin Olive Oil
1/2 diced yellow onion
1/2c balsamic vinegar or red wine
2 jars of your favorite spaghetti sauce
2 bay leaves (optional)

DIRECTIONS:
Mix together ground beef, parmesan cheese or almond flour, eggs, Italian seasoning, salt, pepper, crushed red pepper and garlic in a large mixing bowl until fully combined. Roll into 1-2 oz balls.
Heat olive oil in a pan over med-high heat. Sear meat balls. Once seared, remove and set aside. Add onion and sauté until translucent. Add meatballs back into pan and add balsamic vinegar or wine, deglazing the pan. Stir meatballs and onions, coating them in the liquid until it reduces.
Add sauce, and bay leaves to pan and simmer for at least 30 minutes while you prep noodles. Taste and adjust seasoning as needed.
Cook noodles according to instructions.
Once noodles are cooked, dish up and ENJOY!!

roasted spaghetti squash
sub or cut noodles for roasted veggies
Serve with a side salad and fresh sourdough!
