Vegan Oat Bites

INGREDIENTS For Oat Bites:
2 cups oats
1/2 cup maple syrup
1/4 cup coconut oil
1 tablespoon vanilla
1 tablespoon cinnamon
1/4 teaspoon salt
For S'more Filling:
2-3 vegan marshmallows (I used Trader Joe's), sliced
1-2 ounces high quality chocolate bar (I used Ritual Chocolate Dark Mocha), chopped
For Berry Jam Filling:
1 cup frozen berries
1 cup water
2 tablespoons sugar
2 teaspoons vanilla
1/4 teaspoon salt
DIRECTIONS:
Place all ingredients in small saucepan and simmer until reduced. As it cools it will thicken more.
For Ginger Molasses Filling:
6 dates chopped
1.5x1.5" piece of candied ginger, chopped
1 tablespoon vanilla
1.5 tablespoons molasses
1/4 teaspoon salt
DIRECTIONS:
Place all ingredients in small saucepan and simmer until reduced. As it cools it will thicken more.
DIRECTIONS For Oat Bites:
Preheat oven to 350.
In a food processor, add oats and process until desired consistency (I like mine a little finer).
Add in maple syrup, coconut oil, vanilla, cinnamon, salt and process until its a crumbly dough.
Press about a tablespoon into the bottom of a lined mini muffin tin. Create a small divot for the filling.
Add a small slice of marshmallow and a piece of chocolate or a dab of your filling of choice..
Crumble about 1/2 tablespoon on top of filling and gently press down.
Bake for 18-20 minutes until just starting to brown.
