Maple Cinnamon French Toast

INGREDIENTS:

  • 3 eggs

  • 1/2 cup almond milk (sub for any milk)

  • 1 tablespoon vanilla

  • 1 tablespoon cinnamon or pumpkin pie spice

  • 2 tablespoons real maple syrup or Monk Fruit Maple Syrup

  • 1/4 teaspoon salt

  • 8 pieces bread of choice (I like Ezekiel bread or double fermented sourdough)

  • 3-4 tablespoons extra virgin olive oil


ADDITIONAL TOPPINGS:


DIRECTIONS:

  • Preheat large cast iron pan on medium heat, add olive oil (make sure it doesn't burn, but it gets warm enough to lightly sear the bread).

  • Whisk together all ingredients, (except the bread and olive oil) in a flat container (pick a container about the same size as the bread for easy soaking).

  • Soak one piece of bread at a time until it has absorbed the batter.

  • Cook in the heated pan about 3 minutes each side, until golden brown and cooked through (it will feel spongy, not soggy to the touch).

  • Load up with your favorite toppings and ENJOY.
