Maple Cinnamon French Toast

INGREDIENTS:
3 eggs
1/2 cup almond milk (sub for any milk)
1 tablespoon vanilla
1 tablespoon cinnamon or pumpkin pie spice
2 tablespoons real maple syrup or Monk Fruit Maple Syrup
1/4 teaspoon salt
8 pieces bread of choice (I like Ezekiel bread or double fermented sourdough)
3-4 tablespoons extra virgin olive oil
ADDITIONAL TOPPINGS:
berries
real maple syrup or Monk Fruit Maple Syrup
butter
DIRECTIONS:
Preheat large cast iron pan on medium heat, add olive oil (make sure it doesn't burn, but it gets warm enough to lightly sear the bread).
Whisk together all ingredients, (except the bread and olive oil) in a flat container (pick a container about the same size as the bread for easy soaking).
Soak one piece of bread at a time until it has absorbed the batter.
Cook in the heated pan about 3 minutes each side, until golden brown and cooked through (it will feel spongy, not soggy to the touch).
Load up with your favorite toppings and ENJOY.
