Easy Tortilla Soup + Bonus Bone Broth Recipe!

INGREDIENTS :

2 tablespoons extra virgin olive oil
1 yellow onion, diced
1/2 green pepper, diced
1/2 red pepper, diced
4-5 carrots, chopped
4 garlic cloves, smashed or minced
3 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons cumin powder
1 teaspoon salt (or to taste)
optional, 1/8+ teaspoon cayenne pepper
10-12 organic chicken drummies (or another bone-in cut of chicken or whole)
5 cups filtered water
1 tablespoon apple cider vinegar
14.5 oz can fire roasted tomatoes
1 zucchini, halved or diced
1 cup corn (frozen/fresh/canned)
14.5 oz can black beans
Fresh squeezed lime juice to taste
GARNISHES:
Green or red cabbage thinly sliced
Chopped cilantro
Sliced green onions
Thinly sliced radishes
Avocado slices
Cheese
Sour cream
Lime Wedges
Tortilla Chips (recipe to come)
DIRECTIONS:
Heat olive oil in a large dutch oven or stock pot over medium heat.
Add onion, peppers, carrots and garlic cloves, sprinkle with salt and sauté until onions begin to go translucent. They should produce moisture, not dry out. If they dry out, lower the heat slightly.
Add chili powder, dried oregano, cumin powder and continue to sauté veggies until the seasoning become aromatic.
Next, turn up the heat slightly add the chicken, stirring to cover all the pieces in the seasoning. Cook uncovered, stirring occasionally for 3-5 minutes.
Add water, apple cider vinegar and tomatoes. The water should cover the chicken. If chicken is sticking out, either rearrange it and/or add more water.
Simmer covered for an hour or more. The longer you cook, the more flavor will be pulled out of the bones. Stir occasionally to rotate chicken.
Prep garnishes.
15 minutes before serving, pull out the chicken legs to cool so you can easily pull the meat off. Add the zucchini and cook until soft.
Meanwhile, add the corn and black beans (make sure you don't cook them, they should be added before serving) and remove the meat from the bones and out the chicken with the soup. Put your chicken bones and scraps in a medium stock pot.**
Finish with lime juice, salt and pepper to taste. ENJOY!

**SUPER EASY-BONUS BONE BROTH RECIPE:
Cover your bones with filtered water. Add 1 teaspoon apple cider vinegar.
Simmer for 12-24 hours.
Drain, cool, refrigerate or store for fabulous homemade chicken broth!
